A simple, gut-loving, anti-inflammatory bread that’s naturally gluten-free and supports digestion, hormones, and blood sugar balance.

Ingredients

• 170 g freshly ground flaxseeds - Grind fresh for optimal lignan bioavailability; supports anti-inflammatory omega-3 conversion and balanced blood glucose levels.

• 30g sunflower seeds - Provides vitamin E, an antioxidant that may protect the gut and reduce gut inflammation.

• 30g psyllium husk - A prebiotic soluble fiber that promotes butyrate production, supporting gut barrier repair and bowel regularity.

• 3 whole eggs - Supply essential amino acids & choline for methylation and hormone detoxification.

• ½ teaspoon (Celtic or Himalayan pink salt) - Mineral-rich for electrolyte balance and hydration.

• 150 ml warm filtered water

• 1 teaspoon GF baking powder

Instructions

1. In a bowl, combine all the dry ingredients, including the seeds, baking powder, and salt.

2. In a separate bowl, beat the eggs until foamy and frothy.

3. Add the dry ingredients to the eggs and mix until fully combined.

4. Add the warm water and mix well.

5. Let the batter rest for 15 minutes to allow the flaxseeds to absorb the liquid.

6. Preheat the oven to 190°C (375°F).

7. Bake for 1 hour.
