Ingredients
4 free-range eggs
250 g almond flour
50 g green banana flour (Green banana flour is rich in resistant starch, a prebiotic that supports gut health and reduces inflammation.)
3 medium ripe bananas, mashed
1 tsp ground cinnamon
¼ tsp ground nutmeg
1 tsp gluten-free baking powder
1-2 tbsp date powder
A pinch of salt
100 g dark chocolate (minimum 85% cocoa), chopped
A handful of chopped walnuts
Method
1. Preheat the oven to 185°C and grease or line a loaf tin with baking paper.
2. Beat the eggs in a large mixing bowl
3. Add the mashed bananas and mix until well combined.
4. In a separate bowl, combine the almond flour, green banana flour, chopped walnuts, date powder, cinnamon, nutmeg, baking powder, and salt.
5. Gradually fold the dry ingredients into the wet ingredients until a smooth batter forms.
6. Fold in the chopped dark chocolate.
7. Pour the batter into the prepared a non toxic ceramic loaf tin and smooth the top.
8. Bake for 45 minutes, or until a skewer inserted into the centre comes out clean.
Allow the banana bread to cool in the tin for 10-15 minutes before transferring it to a wire rack to cool completely.
